Recipe Tuesday: Almond Joy Granola

Back on the homemade granola wagon!  We had been buying some boxed stuff, and I had received granola from Attune (which I can’t get locally…booo).  I was enamored of the little chips in the Attune granola and wanted to try to recreate this at home.  One thing that I don’t like about granolas, though, is that any chips fall to the bottom and it is hard to keep it evenly mixed.  I came up with a good solution.

Here is Almond Joy Granola:

Ingredients:


The dry:

  • 3 cups of rolled oats
  • 1/4 cup of unsweetened coconut (you can use sweetened)
  • 1/2 cup of sliced almonds
  • 1 tsp of cinnamon
  • 1/3 cup of mini chocolate chips

The wet:

  • 1 tablespoon of coconut oil (could use any oil, coconut just adds awesome flavor)
  • 1 tablespoon of water
  • 2 tablespoons of brown sugar
  • 1/3 cup of light honey (or use corn syrup)
  • 1/4 tsp of salt
  • 2 tablespoons of cocoa powder

Preheat the oven to 300 degrees F

In a large bowl, mix together the oats, coconut, almonds, and cinnamon.

In a small bowl, mix the water, coconut oil, brown sugar, honey, salt, and cocoa powder.  Heat this a little in the microwave if your coconut oil is solid.

Add the wet to the dry.

Just keep mixing and mashing to coat all the ingredients.

Spread the mixture out onto a baking sheet.  I lined mine with a silicone mat, but you probably don’t need to do this.

Bake at 300 degrees F for 30 minutes, stirring the granola every 10 minutes.

Pull the granola out of the oven and smooth it out in a single layer.  Then sprinkle the mini chocolate chips over the granola evenly while it is still warm.

The trick. After several minutes, fold the granola with a spatula to distribute the melted chocolate chips.  Just gently, you don’t have to really stir it up.  This will stick chunks of granola together.

Let cool thoroughly until the chocolate has had a chance to harden up.  It will give you clumps of granola with bits of chocolate.

Delicious!  The granola itself is very lightly sweet.  The chips are what make the granola.  It got a thumbs up from John!

I would have to sit down and really measure, but it is probably fairly typical granola at about 200 calories per 1/2 cup.

Happy Pi Day!

Did you all remember to change your clocks?  It actually made me sleep a little bit later, but not by much.   Started off Sunday and the beginning of the work week with the glorious bagel!

Trail mix with cream cheese.  I decided not to bring my own cream cheese/protein powder mix today and just have a carbier (new word alert!) breakfast for my rest day.  I need today’s rest.

I need to learn how to rest and relax like Pixie does.  She has it down pat.

Slow work day today. That means a little exploring on Facebook today 😀

Doubled up on protein for lunch with greek yogurt, a little PP, strawberries and my choco protein granola.

Last year, we went out for pie.  This year, John decided to make a pie to celebrate.  John is a total whiz at math, and has an undergraduate degree in mathematics.  He double majored in music and math.  He is Mr. Smartypants.   His contribution to Pi day:

An apple cranberry pie.  The crust was a graham cracker crust that he made using apple juice concentrate instead of butter.  I think the crust needs a little tweaking, but that has some good potential! Went well with my latte…

I am really hungry today.  Sometimes that happens on Sundays to me after I have a hard week of exercise.  I am trying really hard not to snack, but I did eat some peanuts and crackers while cooking dinner, which was….

Now I have chicken cooked up for meals this week.   I still have to do some work tonight.  Blah.  Evening snack will be a pear, or possibly some cottage cheese.

Question:  Are you good at math?

Choco Protein Granola

This granola has a nice chocolatey flavor and 5 grams of protein per 1/2 cup!  I used whey protein powder for this. If you use a soy, you might need a little more liquid.

Ingredients:

  • 2 cups Rice Krispies
  • 2 cups rolled oats
  • 1/4 cup (25 g) sliced almonds
  • 4 tablespoons of coconut
  • 2 tablespoons of apple juice concentrate
  • 2 tablespoons of honey
  • 2 -3 tablespoons of water
  • 1 tsp vanilla
  • 2 tablespoons of brown sugar
  • 2 tsp of oil
  • 2 tablespoons of cocoa powder (10 g)
  • 1 scoop (34 g) chocolate protein powder

Preheat oven to 325 F.  Spray a cookie sheet with nonstick spray or use a silpat liner.

In a large bowl, combine the Rice Krispies, oats, coconut, and almonds.

In a small bowl, mix together the the apple juice concentrate, 2 tablespoons of the water, honey, brown sugar, oil, and vanilla and mix well.  Stir in the protein powder and cocoa powder.  Mix really well to get out as many lumps as you can.  If the mixture seems too thick, add the extra tablespoon of water.  This mixture will be syrupy – like this:

Pour over the oat mixture.  I found it easier to mix this with my hands.  You can use a spoon or spatula, but you will crush the Rice Krispies too much.  Best to get your hands dirty 😀

Once thoroughly mixed, spread onto the prepared cookie sheet evenly.  Bake for 40 minutes, stirring every 10 minutes or so and breaking up large pieces of the granola.  When baking granolas, remember that they aren’t crispy when they come right out of the oven, but still somewhat soft.  As it cools, it gets crispy, so you don’t want to over bake it.

Let cool and enjoy!

Stats using my whey protein powder (120 cal per scoop and 25 g of protien)

Per ounce of granola:

120 calories, 3.2 grams of fat, 21 grams of carbs, 2 grams of fiber, 5 grams of protein.

Chai Spice Granola

As promised, here is the recipe for my chai spice granola!  Again, this is lightly sweet.  I added Rice Krispies to this to help bulk up the granola without adding a lot of calories.  It stretches the portion size out that way.  That said, I do not have nutritionals on this yet 😀

All of the spice gives this a nice flavor.  You could try adding some black pepper, too, like would be in chai.  I was going to, but forgot.

* 2 tbsp of brown sugar
* 2 tbsp apple juice concentrate
* 2 tbsp water
* 2 tsp oil
* 2 tsp honey
* 2 tsp pumpkin pie spice
* 1/2 tsp ground clove
* 1/2 tsp cardamom

* 2 cups rolled oats
* 1 cup rice krispies
* 1/4 cup slivered almonds

Preheat oven to 325 F. Mix together everything but the last 3 ingredients in a large bow. Add the rest and mix really well until all coated.

Spread on a cookie sheet and bake at 325 for 30 minutes, stirring every 10 minutes.  Remember that granolas crisp up once they are cooled, not in the oven, so don’t burn it!

Let cool and store in an airtight container.

Fridge/freezer cleanout for lunch!  I had 1 waffle topped with the last Boca Burger and some laughing cow cheese.

lunch1129Plus 2 clementines!  These are so good.  You’ll be seeing lots of these this week!  I have decided I don’t care for the Boca Burgers anymore.  I used to eat them all the time, and as I moved away from processed foods and soy, those left, too.  I got a box for old time’s sake and didn’t care for them.

Work was really slow today.  I did not get a single file until 5 hours into my workday.That means having to take some PTO if I want to get paid for today!

However, that did mean some play time in the kitchen.  I made up a new batch of granola that I named Cranapple Spice:

Ingredients:

  • 1/8 cup of maple syrup
  • 1/8 cup of of apple juice concentrate
  • 2 tsp sunflower (or other light) oil
  • pinch of salt
  • 1/2 tsp vanilla
  • 1 tsp pumpkin pie spice
  • 2 cups rolled oats
  • 1/4 cup slivered almonds
  • 1/4 cup of dried cranberries, chopped

Preheat oven to 275 F.  In a bowl, mix together the apple juice concentrate, maple syrup, oil, salt, vanilla, and spice until thoroughly mixed.  Add in the oats and almonds and stir/mash really well until the oats are thoroughly coated.  It may not look like enough liquid, but it is.  Pour onto a baking sheet lined with parchment paper or a silicone mat.  Bake at 275 for 1 hour to 1 hour and 15 minutes, stirring the batch every 15 minutes.  Remove from oven and add the chopped dried cranberries.  Very lightly sweet and crunchy. Delicious!

Granola and roasting your own coffee

Today was the start of my work week!  Had good productivity, so I actually finished up early.  Yay!

The day started with our Sunday bagel and paper reading:

No exercise today since it is a complete rest day for me.  Still hard for me to do these days.

Here is the granola recipe that I talked about yesterday.  It’s quite good, not super sweet and I think it actually does better as a topping than with milk.  I might tweak it a bit:

Ingredients:

  • 3 cups rolled oats
  • 2 tsp cinnamon
  • 1/4 tsp salt
  • 2 tablespoons of flax meal
  • 1 ounce of chopped walnuts
  • 1 tsp vanilla
  • 1/4 cup maple syrup (the real stuff, please)
  • 1/4 cup water
  • 1 tablespoon oil
  • 1 tablespoon brown sugar
  • 40 grams of chopped dates

Preheat oven to 300 degrees F.  In a small bowl, combine the vanilla, maple syrup, oil, water and brown sugar and mix to dissolve the sugar.  In a large bowl, mix all dry ingredients except the dates.  Add the liquid mixture and stir until it is all absorbed into the dry.  Spread onto a baking sheet and cook for about 45 minutes, stirring every 15 minutes or so.  I found the granola was not quite crunchy right out of the oven, but it crisped up as it cooled.   After cooling, stir in the dates.  I actually also added some chopped dried cranberries later.

Stats:  31 grams (scant 1/2 cup or generous 1/3 cup):  141 calories, 4 grams of fat, 3 grams fiber, 4 grams protein.   Pretty good for granola!

Had a somewhat boring eating day, but thought you might like to see the coffee roasting process from earlier.  We had run out of all coffee in the house (thanks Susan!) so it was time to roast some.

We purchase green coffee from either Sweet Maria’s or Coffee Project.

Here are the green beans.  They actually smell a lot like legumes, or like dried peas.

I have a large roaster, but we have not gotten the wiring done (need 220 boosted) to set it up, so I have gone back to my good air popcorn popper.  Please note that you do need the lid on it, but I took it off to catch some action.  You just fill with about 1/2 cup of beans and plug it in.  You can see the chaff flying off, which is the outer skin of the bean.

As the beans heat up, they start snapping at the water is forced out of the bean and it expands.  You can stop the roasting from this point on and have a light roast.  Not sure if you can hear the snaps or not.

Coffee all done, super hot and smoking.  This has reached the 2nd crack stage and is considered a dark roast.  This bean is Sumatran, which takes a dark roast nicely.  You can hear the beans still snapping.  Roasting coffee is smoky, so you either need to do it outside or have an understanding spouse 😀

I am going outside quickly here LOL! After the beans have cooled and set for a bit, you can grind them up and have the freshest coffee you have ever had!  It takes about 5 minutes or so to do a 1/2 cup of beans, which is around 3-4 ounces.  I do 3 batches in the popper when I roast.

Small steps.

Today was a good eating day. Good thing because yesterday wasn’t. Pretty stressful around here.

Finally today we have hot water again, thanks to a new hot water heater (even though the ‘old’ one was less than 4 months old.) There are those days that just aren’t good, and laughing at it isn’t an option.
But, today is a new day.

I got a new toy to play with, it’s actually a product I am reviewing, and it takes a ‘small step’ approach to weight loss. Just a little tease and I’ll post the review in a few days after I try to break it LOL! (J/K – it’s actually quite fun).

I need to extra focus on eating. Starting to let little snacks and stuff sneak in. I think I may have to ban granola from the house for a while. I tend to nibble on it. I hate it when a green light food becomes a red light food and I have to remove it from the premises for awhile. Removing the granola means getting rid of one of my very favorite brekkies for a bit (greek yogurt, honey, strawberries, granola). Maybe the change will be good.
I guess I am kind of like the warden, and certain foods have to go into solitary confinement when they can’t get along in the general population (aka my normal foods).

So, I am trying to think of something new for breakfast a couple days a week. No cereal, as that is problematic for me to munch on. I already do oatmeal in my protein pancakes.
I am thinking of making an egg sandwich using the Arnold sandwich thins and some cheese. Yep – that sounds pretty good!

My very favorite brekkie!

Here is what I eat for breakfast probably 4 days a week, and I love it! I normally rotate 3 different breakfasts during the week, but this one is my favorite:


The picture probably doesn’t do it justice, it is so yummy.
1/2 cup of Fage 0% Greek yogurt (2% when I want a decadent treat)
1 teaspoon of honey
1 cup of strawberries, chopped
1/2 cup of Nature’s Path Organic Hemp granola

Mixed all together. 264 calories.
Served with cafe au lait on the side 🙂
