Choco Protein Granola

This granola has a nice chocolatey flavor and 5 grams of protein per 1/2 cup!  I used whey protein powder for this. If you use a soy, you might need a little more liquid.

Ingredients:

  • 2 cups Rice Krispies
  • 2 cups rolled oats
  • 1/4 cup (25 g) sliced almonds
  • 4 tablespoons of coconut
  • 2 tablespoons of apple juice concentrate
  • 2 tablespoons of honey
  • 2 -3 tablespoons of water
  • 1 tsp vanilla
  • 2 tablespoons of brown sugar
  • 2 tsp of oil
  • 2 tablespoons of cocoa powder (10 g)
  • 1 scoop (34 g) chocolate protein powder

Preheat oven to 325 F.  Spray a cookie sheet with nonstick spray or use a silpat liner.

In a large bowl, combine the Rice Krispies, oats, coconut, and almonds.

In a small bowl, mix together the the apple juice concentrate, 2 tablespoons of the water, honey, brown sugar, oil, and vanilla and mix well.  Stir in the protein powder and cocoa powder.  Mix really well to get out as many lumps as you can.  If the mixture seems too thick, add the extra tablespoon of water.  This mixture will be syrupy – like this:

Pour over the oat mixture.  I found it easier to mix this with my hands.  You can use a spoon or spatula, but you will crush the Rice Krispies too much.  Best to get your hands dirty 😀

Once thoroughly mixed, spread onto the prepared cookie sheet evenly.  Bake for 40 minutes, stirring every 10 minutes or so and breaking up large pieces of the granola.  When baking granolas, remember that they aren’t crispy when they come right out of the oven, but still somewhat soft.  As it cools, it gets crispy, so you don’t want to over bake it.

Let cool and enjoy!

Stats using my whey protein powder (120 cal per scoop and 25 g of protien)

Per ounce of granola:

120 calories, 3.2 grams of fat, 21 grams of carbs, 2 grams of fiber, 5 grams of protein.

    OMG, that looks sooooooooooo good! I am not sure I could be good at portion control with this in my house! 🙂 I love the granola stuff so I stopped bringing it in the house.. even the healthy stuff. Kashi has that granola cereal that has a good amount of protein & I just could not keep my hands off it so I stopped buying it.

    That sounds so good. I know what I’ll be doing next week. 🙂 Wish granola was lower in calories. But a little adds a nice crunch to greek yogurt.

    Have a question for you: can you get a good workout from a Bowflex? I mean as good as with the free weights at the gym? I have a Bowflex upstairs that I’ve used maybe 3 times but if it gives a decent workout (to build some muscles) I might use it more.

      A bowflex can give you a good workout. No question. Not as good as free weights, in my opinion, but a very safe machine to use. I say get up there and use it!

    Interesting look to that chocolate granola! Reminds me of a type of cookie we used to make when I was a kid — probably not the best memory to hold on to right now. Wanted to thank you for the post on my blog the other day. You zeroed in on my line about my margin of error — and that in turn really brought it to my attention as well. It stuck in my mind all day yesterday and truly helped me focus when making food choices. Funny how we can say something and not pay attention — sometimes it takes another eye to point out what’s important! But really, thanks so much. That one comment really made a difference for me.

    Bookmarked!! I’ve been using vanilla whey powder in my granola lately and I love how it sticks together in clumps, which is something I don’t get when I skimp out on the sugar in the regular stuff 😛

      Yay! I’m glad it turned out for you. I worry sometimes when people make one of my recipes how it works for them LOL. It is good stuff.
