Rainy day and curry

What a soggy day today!  For some reason, rainy days make me really snacky.  No weight workout today as I have the race tomorrow and I want to rest my hamstring.  Feels much better, though.

I was going to pick more blueberries with my mom today, but it was raining all day, so nixed that.

Lunch was the other of those strawberry pluots plus an egg sandwich:

Spent most of the morning hoping the rain would stop and cleaning.   Wheeee…..

Then went out and picked up groceries for a little party tomorrow for John.  His birthday is next week, but we are having a cheese, fruit, and veggie thing and then cake (chocolate with chocolate buttercream) tomorrow night with the family.

Stopped and had coffee and a cookie that John had made – a lowfat version of a sugar cookie

We had a throw together dinner.  Wanted something Indian curry style, so I put together the following:

  • black mustard seeds
  • cumin seeds
  • garam masala
  • 1 tablespoon coconut oil
  • 9 ounces of chicken, cubed
  • 1/3 cup red lentils
  • 1 tablespoon red curry paste (hot!!!)
  • 1 can of lite coconut milk

Sauteed the spices in the coconut oil until the seeds popped, then added the chicken and browned.  I had parcooked the lentils and then added them to the pot with the curry paste and coconut milk.  Then simmered while the brown rice cooked.  This will serve about 4 people.  I wasn’t going to use the whole can of coconut milk, but the curry paste is very hot, which is fine by me, but I didn’t think John would like it so I used the rest of the coconut milk to dilute it.

I pan sauteed broccoli to add to my bowl to bulk it up.  1/2 cup of rice doesn’t go very far.

Quite tasty!  I used the lentils to thicken it instead of ground cashews to save on some fat.  But, I did snack on some!

Have to get up flippin’ early again tomorrow.  We need to be registered for the Silk & Satin race by 7:30 tomorrow morning.  I hope to be under 30 minutes.  Last year was my very first official 5K and it was this same race.

My time was around 45 minutes, which I hope to better tomorrow 😀

Weather calls for sun with maybe morning clouds.  Should be good if it isn’t too humid.

Hopefully John won’t finish too far in front of me.  I finally got him into running, and now he is faster than me!   D’oh!

5 miler and 5 a day!

Had a goal to do a 5-mile run this morning.  Had some fuel of a toasted wheat english muffin with a couple tsp of almond butter.  Wish I could just blob the nut butter on there!

I then went to the track and hit a comfortable pace.  I lost speed when training for my triathlon because I stopped doing speed work.  I wanted to finish the 5 miles in under an hour, and I just made it!  59:01.   And I could have gone further, too. That is a shade under a 12 mile pace, which is about 2 minutes slower than my 5K pace.  I know this is horribly slow to a lot of people (not that I care LOL) But, I wasn’t pushing or anything, just going for distance.  I want to test longer runs before I commit to doing a 1/2 marathon.   At this rate, it would take me about 2.5 hours to do a 1/2.  Do I really want to run that long?? I definitely need some knee braces for the longer runs.  I do not want any injuries and I would rather be on the cautious side.

I was really hungry when I got back and made some pumpkin oats with protein powder:

  • 40 grams oats
  • 1 tsp brown sugar
  • cinnamon
  • 1/2 cup pumpkin
  • 1/2 scoop protein powder (stirred in at end)
  • topped with a spoon of cranberry preserves (found at the local smokehouse!)

Glad I did the run early in the morning, because  a light rain has settled in for the day and has continued.

Lunch was so good!  I was craving something salty (think it was from sweating so much during the run).  So I decided to scramble 1 egg with egg whites and topped with feta cheese.  Served with a side of those FSTG sweet potato chips (yum!!) and a wonderful nectarine.

I didn’t have any veggies for lunch and I really try to get at least the 5 a day recommended F&V per day.

For snack, I decided to have some fruit with my latte.  Going on the 2nd day without a protein bar!

Zipped through my work today!  Yay!  I was done by dinner time.  Decided to pile on the veggies – at least 2 servings of broccoli here, plus another turkey burger on a wheat pita.  Yum!

Had a bit of a sweet craving, so nabbed one of John’s butterscotch candies!

I’ll have another small snack later while watching the Tour!  It’s a hill day and should be exciting!

Fruit and veggie tally for the day:

Pumpkin, broccoli, banana, strawberries, nectarine.  A total of 6 servings.  And no cereal!!

Question: How many servings of fruits and veggies do you get in a day?

Brick and GoWear fit

Well, the weather wasn’t promising when I got up, but I decided to go for the brick anyway.  John actually decided to join me for the bike leg, which just about made my jaw fall on the floor.  He is usually sleeping when I get up and leave the house for the Y.

First, I fueled with this (half before the bike and half after the bike).

We then biked for 6.7 miles in about 1/2 hour.  That was with a couple stoplights in there.  John went home and I continued to the school and ran 3.25 miles around the track.  It took about 37 minutes.  I am definitely slower after the bike, but that’s okay.  At least I ran the whole thing!

After watching Alton Brown last night and his blueberry episode, I knew what I wanted for brekkie.  Num!

For snacks, I had the same as yesterday, only the cinnamon chips were mixed with some dark chocolate ones.  The cinnamon chips are made by Hershey and you can find them in the baking aisle with the other chocolate chips.  They are good!

For dinner I was in the mood for eggs  again (for the 3rd dinner in a row!).  I made a giant salad with some of the POM vinaigrette, hardboiled eggs, toasted pecans, and provolone cheese.  Kind of a chef salad without the meat.

Today was the end of my work week!  Yay!   No work until Sunday.   Exciting girl that I am, I might go to the library tonight LOL!

NROLW and pizza!

Did Stage 2 workout B of NROLW this morning.

Barbell deadlifts:   1 x 10 75 pounds,  1 x 10 80 pounds

Bulgarian split squat:  2 x 10 with 25 pound plate

Underhand lat pulldown:  1 x 10 50 pounds, 1 x 10 55 pounds

Reverse lunge with forward reach:  2 x 10 with 10# dumbbells (coordination is hard on this one LOL)

Prone cuban snatch:  2 x 10 with 10# dumbbells

Swiss ball crunch:  2 x 10

Reverse crunch:  2 x 10

Lateral flexion:  2 x 10

Prone cobra:  2 x 60 second holds

Cardio:
25 minute walk
15 minute HIIT on the stationary bike

Nice workout today!

I tried another green smoothie for lunch.  I amped it up with protien Lori-style!

Into this mix:

3 cups spinach leaves (30 cal)

1 serving of frozen tropical fruit mix (pineapple, mango, papaya 100 cal)

30 grams vanilla whey protein powder (100 cal)

1/2 cup 1% milk (55 cal)

1/2 cup water

Without the strawberries – I got that wonderful bright green color!

I actually got almost 2 full glasses out of that, which I sipped on for quite a while while working.  I liked this one much better than the one with the banana.

John was going to make pizza for dinner, and I remembered an easy wheat pizza crust recipe from Steph Chows for a 30 minute crust.  I forwarded it on to him and he made the most delicious pizza out of it!  With fresh mozzarella and basil off the back porch.  This was not really a lot of cheese, but the fresh mozz melts more completely than the fresh stuff.

Half the pizza had some locally made andouille sausage on it.  Here is my 300 calorie slice (mostly cheese with one small sliver of sausage):

It was phenomenal!   Nom, nom!!  It was all I could do to not eat more!  Definitely have leftovers LOL.  What an easy crust recipe, too.
