Dry ingredients:
- 3/4 cup white flour
- 1/2 cup whole wheat flour
- 1/8 cup brown sugar (yes in dry)
- 3/4 tsp baking soda
- 1/2 tsp baking powder
- pinch of salt
Wet ingredients:
- 1/4 cup of honey
- 1/4 cup nonfat yogurt
- 1/2 cup of brewed coffee (cooled)
- 1 egg white
- 3/4 tsp vanilla extract
Topping:
- 1 tablespoon wheat flour
- 1 tablespoons white flour
- 1 tablespoons of brown sugar
- 1.5 tsp of butter (softened)
Directions:
Preheat oven to 400 degrees F. Spray a 6 cup muffin tin with nonstick spray.
Sift together the dry ingredients in a large bowl. In a separate small bowl, whisk together all the wet ingredients until yogurt is thoroughly mixed in.
Add the wet mixture to the dry and stir just until combined. Do not overmix!
Divide the batter evenly into the 6 muffin cups. It should come up to the top of the pan.
In a small bowl, combine the topping ingredients, mixing well with your fingers to incorporate the butter. Sprinkle evenly over the muffins. Bake for 20 minutes until a toothpick comes out clean.
Approximately 180 calories per muffin. You may actually get 7 muffins out of the batter, which would bring the calorie count to 150.
