Happy Wednesday (or Thursday for morning readers)! I was able to get in to see my dentist on Monday and I do, unfortunately, need a root canal. My tooth is cracked. He gave me some antibiotics to take away the inflammation and on day 3 I already feel so much better. I realized that I have not taken any antibiotics since we moved to New York 10 years ago! Yay for my immune system!
I need to wait to get it done until a week before Christmas because my dentist broke his ankle and he is in a cast boot for a while with no weightbearing, so he can’t do procedures right now. He has a knee scooter to get around with. He broke his ankle while on a hike. It was icy at the summit and he slipped. It took them 4 hours to get down the mountain. Ugh. My last root canal was painless (during the procedure anyway) and I am willing to wait for him to do it since I trust him.
Anyhoo, on to the post title. I’ve read about Kodiak Cakes on blogs. I think they were the darling of the internet a few years ago. I finally saw them at our grocery store and decided to pick up the Power Cakes
Have any of you tried these? 14 grams of protein per serving! And only 190 calories per serving. The nice thing about this mix is that you only have to add water to it. Nothing else. That’s nice when you are only making 1 serving. It does say to use 1/2 cup of water for 1/2 cup of mix, but that was way too watery. I had to add more mix to thicken it up. Next time I will start with 1/4 cup and add if I need it. Just an FYI.
It makes 3 pancakes using 1/4 cup of the mixed batter for each pancake.
I topped them with my usual blueberry sauce, which is Wyman’s frozen blueberries heated in the microwave and then using a cornstarch slurry to thicken it up.
The verdict? These were really good! Sometimes high protein things like this can be spongy or rubbery, but these pancakes were light and fluffy.
