A fabulous food post! Okay, maybe not fabulous, but I like it 😀 Here is a sampling of the last couple weeks meals as proof that I do eat more than cupcakes and sundaes.
The twice weekly bagel:
These are cheese blintzes. They come frozen and make a quick and easy breakfast. The brand is Golden. This plate is about 300 calories. Yum!
Lunches have been a lot of yogurt/berry/cereal combos. Have you seen these?
These are pretty tasty and have more protein than Cheerios.
Coconut flour banana bread pudding topped with nut butter.
I have also been eating egg sandwiches:
Note I have been eating different veggies this month
Dinners have been back to some chicken again 😀 This time with sauteed spiralized zucchini, summer squash and shredded carrots.
And that yummy spinach roll up recipe!
John also did his potato crust quiche one night.
That doesn’t look so pretty because we cut right into it instead of letting it cool and set a little bit. That’s what happens when you are hungry!
More chicken. Have I ever said how much I love hot sauce? I’m a Frank’s girl. If I could, I would eat chicken wings every single day. With bleu cheese.
We have been enjoying our change up of having an adult beverage on Friday nights.
Weight loss is still happening slowly. I guess I can lose weight during biking season if I work at it 😀 Proving myself wrong on that front.
I’ve been needing a new breakfast idea. Stealing your egg sandwich idea!
They are quick and easy!
Yum! It all looks so good. I think I’ll steal your sautéed squash idea!
All the food looks good – I like chicken, too. Egg sandwich is yummy – English muffin? And you use smaller plates, too.
The cheese blintzes look tasty. Today I got some of those nut thins to try!
I really like the nut thins. FYI, seal the bag because they seem to stale faster than regular crackers.
Happy to see you are eating different vegggies. The meals all look good. Like your chicken I could eat some kind of pasta every day.
I like pasta, but mostly as mac and cheese 😀
wait MADE WITH BEANS?!
we need to find those….
They are pretty good! Super crispy, too. That’s why I like them in my yogurt.
The minute I saw the bean cereal I thought, “I wonder if it makes you gassy?” LOL! Good job getting those veggies in. I think spiralizing makes them fun at least, right?
I don’t *think* they make you gassy? I didn’t notice, but then I wasn’t really paying attention LOL
One of these days I will spring for your spiralizer…I’ve been in a “no clutter” mode for several months and can’t quite bring myself to add ONE MORE THING to my kitchen. But you do make those veggies look appealing!
I like the spiralizer a lot. However, I did cut myself on it while washing it. I have a brush to clean the blades, but then I dropped it and caught it, of course right on the blade part. Sharp…
I love the spiralized veggies! Note to self: Get a spiralizer when you see one. And Frank’s hot sauce? the best! Have you tried the Frank’s Bollywood hot sauce? OMG…it is SOOOO good!
Bollywood sauce? I have not seen this!
Your sautéed spiralized zucchini, summer squash and shredded carrots is just danged beautiful! Stop doing that, I’m trying NOT to buy a spiralizer.
Do it! 😀
Great looking food Lori!!!! Hey, take that weight loss & good that you are getting it. Slow but surely!
I’m crazy about the look of those spiralized veggies! Are the carrots pre-cut or did you have to do those yourself?
It sounds sad but sometimes just a different look of the same old veggies can really help!
The carrots were the precut shreds. I couldn’t find a carrot the right size to spiralize, so I just got the shredded ones.
I totally agree on changing the look of veggies. When you aren’t a veggie lover, any trick that gets you to eat more is a good thing.
While I pretty much love most hot sauces, Frank’s is my true go to – just that little bit of vinegar kick, but not as much as Tabasco. And for the record, I could eat chicken wings with blue cheese every day too!
I love Franks. Of course, that is the one and true wing sauce in NY, you know.
The cheese blintz’s look good. Can you buy these somewhere nationally?
Yes. The brand is Golden http://oldfashionedkitchen.com/cheese-rf/
