Today is the last week of summer break. School starts around here after Labor Day. We don’t have kids, but we live right by a school. I got up early this morning to take a quick spin on the bike. I’ll be needing to avoid the school busses soon for my rides. Morning path.
Purty isn’t it? Only 36 miles to go to hit 400. I am counting down now. I’ll make at least 1 of my monthly goals, hoping to get this one down. 😀

Working steadily to lunch time. Back to land meat again, so chicken was on the menu for lunch – surprised?
Baked potato with laughing cow and lots of hot sauce. Yum!

This is a mini whoopie pie. We went to see a movie last night at the local music house (Casablanca) and they had goodies there and told us to take some home. So, I brought home this cookie!
I finally tried one of those cauliflower crust type of meals for dinner. I followed this recipe. Normally I have seen this with mozzarella and thought the cottage cheese sounded interesting.
I think my batter was too wet. Here is the finished product.
They were supposed to be more like “breadsticks.” John said they were more like hashbrowns and I agree. He actually liked them. I liked them dipped in sauce, but most certainly not breadsticks or crust like at all.
Again, I get fooled in by people exclaiming how it is just like pizza crust. Not! It actually is very low cal and pretty filling. After saying all that, I would eat it again. This whole plate is about 160 calories. I ate about 2 cups of cauliflower for dinner 😯
I have some mango slices ready to go if I get hungry later. I’ve been feeling really in a good place about my food the last couple weeks with enough things to make me happy without overdoing it. I have also been sticking pretty well to a rule that if I want something to eat at night, it has to be fruit and not anything like chocolate chips or cereal. I find that is very satisfying for me most nights, although the occasional ice cream cone makes an appearance
Tonight is relaxing and Grimm! Hooray for vegging out 😀 I swear I relax more on a weeknight than I ever do on weekends.
It’s sticky and humid here today. I can’t complain too much about the weather. Hope everyone is safe from Isaac!
Hi Lori! I love your honest comments. I never expect extremely healthy low-cal food to be just like the fattening version, but I do like to eat 2 cups of something that tastes fairly good but is guilt-free.

Yes, that is one of my BIG pet peeves–people naming a new low-cal food after some decadent well-known food. And sometimes the pics make you think it will be like the real thing. Nonetheless, I do enjoy these new foods. I just wish we would learn to name them something different (yes, I am guilty of doing this naming thing too!) So, thanks for the link. I definitely want to try these. The whole time I’m reading the recipe, I’m thinking ‘where’s the marinara sauce? They can’t be pizza without marinara sauce?’ LOL at me.

I got suckered into the just-like-mashed-potatoes cauliflower thing a few years ago, and I made a solemn vow to never EVER believe cauliflower claims again. I’ll just crunch it raw, thank you very much. 🙂

I don’t eat much cauliflower, just straight cooked I don’t like it but this looks much better.

Is there a recipe for the cauliflower thing? I really need to have more recipes to try because I’m getting very bored with what I eat… I eat a lot of chicken too and and i swear I’ll start making pecking movements soon.

I haven’t even made it yet I did not believe for a minute that cauliflower crust would turn out like pizza crust. But then, we all know about my cauliflower distrust and general avoidance LOL!
Actually diets that tell me to substitute this for that really irritate me in general. I think if you really like a particular type of food, there is no substitute so you’re better off learning how to eat it reasonably or do without.
I’ve tried to make that cauliflower recipe into a crust by altering the ingredients, even making it non-paleo, to no avail – each cauliflower pizza was a knife and fork pizza – tasty, but definitely not pizza!

Yum!!! I haven’t made cauliflower pizza crust in so long. It wasn’t exactly like pizza crust but I really enjoyed it. Cauliflower is so versatile. Rice it, mash it, roast it, cut it into popcorn sized pieces and have a ball.
I wondered if cauliflower ‘crusts” came out “crust like”. Now I know they don’t, but I know I’d like this anyway!!! What a beautiful “beside the river” photo Lori!

I keep reading about cauliflower this & that. Me – I have to be careful of how much cruciferious (not sure about spelling) veggies I eat at one time – tummy bloats & toots & all that – I know TMI!!! 🙂
I have tried both of these recipes and enjoyed them. Not sure if you want to give the bread sticks another go, but these were great…I made them last Super Bowl.
The chicken crust is a winner for me too…nice and crisp and you can pick it up.

I haven’t heard of cauliflower crust…interesting…I’ve heard of cauliflower “mashed potatoes” but haven’t tried it yet.
