I woke up with a frozen yogurt hankering this morning. I was hoping the weather would at least be cooperative. I got up and brewed up some coffee and started work early in anticipation of taking a break in the afternoon for a ride!
Breakfast consisted of peanut flour waffles with the blueberry sauce/coconut butter.
I know you all missed the blueberries the last few days. 😉
Confession – I did not shower until much later in the day. I worked in my jammies all morning because one of my favorite doctors uploaded all his files. He is very easy to transcribe and I can get a lot of files done in a short amount of time (more $$), so I just sat there and typed my little fingers off! Yay!
I finished his files up about lunch time, so I made up some chicken salad/salad. This was 1/2 of a granny smith apple, 10 grams of toasted pecans, 2.5 ounces of grilled chicken, and 28 g (2 Tbsp) of light mayo. Normally I put curry powder in this, but I forgot. Oh well.
Half a bag of butter lettuce and I made like a bunny and ate it.
Temps hit around 60 today. Not like yesterday’s high, but good enough for a ride and sweaty enough for a bit of froyo! I decided to take the path and see if it was all clear of snow.
Quite clear! And not boggy at all, which I expected.

I went past the yogurt place a little and turned back around so that I could get in 15 complete miles by the time I got home.
I had a pistachio Only8 yogurt topped with coconut!
Yummers.
It was actually pretty windy and I was cold by the time I finished this. Most of the wind was in my face on the way home, so that was a good workout.
This is cinder path and one of the several reasons why I purchased a hybrid bike rather than a road bike last year.
I like biking. My hair is getting long, too! John likes the little curl up at the bottom, which I don’t.
I arrived home happy after 15 miles. It felt great. Just a little slow, but I am pleased at where my legs are this early in the season. Totally worth having to work a bit into the evening. One of the reasons I like my job is the flexibility.
Dinner time was brussel sprouts, scrambled eggs, and socca bread with laughing cow.
Socca is a chickpea flour bread that is easy to do and I really liked it.
I will post the recipe later in the week.
Tonight is finishing up the work and then a trip to the liberry!
Oh, and on the macaroon front? I told myself I could have one if I wanted. I broke a piece off of one and that was all I wanted. Interesting.

I see my Cooper’s Cave in the background there, yesterday I got confused as to how the HF end of the trail and the QBY end hooked up, I need to look at the maps.
I was listening to a podcast this afternoon and I thought of you. I don’t know if you listen to podcasts or not, but I really enjoy Terry Bikecast with Georgena Terry. I download it from iTunes. This isn’t an advertisement or anything, but I just thought you might enjoy it. I listen when I’m biking on trails, but not on the streets.

Oops I cut myself off *eyeroll*. Anyway I would like to make the trip to CC as a part of my daily bike rides (sans the ice cream each time of course 😉 ). And your blueberries always remind me of blueberry pie!!!
CC has the Only8 yogurt. It is quite good. Just note that when you get the regular size for the flavors, that is is about 4 servings worth, not the 35 calorie serving!
The path that dumps you out from HF comes out near East End Eatery. Follow Warren a couple blocks and you will see the signs to hook back onto the path.

Do you use any of the laughing cow flavored wedges?? I LOVE LOVE LOVE the garlic & herb one! The chipotle one is nice too. Im afraid to try the bleu cheese..
Yes – this wedge was the tomato basil one. I like that one, the chipotle, and the plain the best. The blue cheese was good, but only applicable with certain foods (IMHO).
Oh that bread looks good. reminds me of something I had in Africa. Can’t wait for your recipe. Of course the froyo looks outstanding!

I’ve been on a chicken/apple/cranberries & raspberry vinaigrette kick lately. Yummy!
I use apple in my tuna salad and I was just thinking the other day that some pecans might add a nice touch as well. So would crushed pretzels, I suppose, but they don’t have quite the same nutrient value. 🙂

Going to buy fresh blueberries as soon as it’s the season for it here. Use deep frozen now but that’s not quite as good as the fresh ones.

Pistachio and toasted coconut. It’s really hard to beat. Mmmm…..I think I’d be riding my bike daily if I had froyo involved. Love your beautiful trails and the cute mallard. Makes me want to go on a bike ride. 🙂
And apples totally make the chicken salad. That little bit of sweet crunch. mmmm. Also like some boiled egg in there.

It was boggy as heck here yesterday and pouring rain today – bah humbug!
You know I make a similar chicken salad but I stir the curry right into the mayo then I let it sit for several hours. When the flavor meld – fabulous!
That is very interesting about the macaroon. Secret? I keep finding that since I’ve been doing INO but allowing myself absolutely anything that I put off on my treat day, I haven’t wanted very much. That has really been surprising to me.
I need to make biking a priority this year. I only got out once or twice last year! Shame on me!

Forgot to suggest: If you want to try gluten free, try the Ezekiel sprouted grain bagels (if you haven’t already). They are usually in the freezer section of the specialty diet aisle at the store.
