I am not a big veggie eater. I only have a hand full of those that I like, which sometimes makes eating healthy a challenge. I do try veggies from time to time to try to expand my repertoire, usually without success unless I puree them LOL. (But, whatever works, right?)
I have to say that I am very tempted to try fresh brussel sprouts. Lyn over at Escape from Obesity made some and they really look good. Roasted, too – which is one of my favorite ways to eat the veggies I do like.
This would be a giant step for me, a veggie-challenged person, to try one of the most picked on veggies out there.
Maybe I’ll pick some up this weekend.

They’re chock-a-block with vitamin C and that stuff that protects against cancer, so you have nothing to lose and everything to gain!
There not bad…. but I have never roasted them…. I have to try that!
try ’em, you’ll like ’em! I love the little green vitamin balls! But that idea of roasting them really appeals to me too. I like them absolutely plain, but for a real treat i will put just a little brown sugar and some crumbled bacon on them–heaven!
