Stovetop mac and cheese!

Looks so bright and sunny. It doesn’t look like -15 degrees, does it?  That’s -26 Celsius, FYI. Let’s make it feel even colder by converting it, shall we? 🙄   There is light at the end of the tunnel, though – it is supposed to break into the 30s this weekend! I told John I just might run around outside nekkid if it gets that warm.

Okay, not really.

We went somewhere different for breakfast.  Back to Cool Beans. We haven’t eaten here for breakfast in a couple years, I believe. Lots of coffee!

It’s very Adirondack/woodsy style inside, although they were playing country music. Sorry country music lovers, but I despise it. Really cannot stand to listen to it. Isn’t it weird how some types of music do that to you?

You know what a perfect dish is for cold weather? Mac and cheese!  I love baked mac and cheese, but it takes a long time to cook and I am just not interested in boxed stovetop mixes.  However, Alton Brown has the best stovetop mac and cheese recipe.  This is our go to on weekends.  It doesn’t take very long to fix at all.

Ingredients:

  • 8 ounces of pasta of your choice
  • 2 eggs
  • 5 ounces of evaporated skim milk (small can)
  • 1 teaspoon of hot sauce
  • 1/2 teaspoon salt
  • 3/4 teaspoon dry mustard powder
  • 4 tablespoons of butter
  • 10 ounces of 2% shredded sharp cheddar cheese

Cook the pasta according to package directions.  While the pasta is boiling, assemble the sauce ingredients.  In a large bowl, beat the eggs. add the milk, hot sauce, salt and mustard powder.

When the pasta is done, drain and return to pot over low heat. Add the butter and stir to melt.  Slowly pour in the egg/milk mixture stirring constantly.  Now stir in the cheese a couple ounces at a time.  Keep stirring for 5 minutes or so until the cheese is all melted, the sauce has thickened up and it is piping hot.

Serve with hot sauce if desired (and why wouldn’t it be?)

Alton Brown Stove Top Mac and Cheese

This is so good! It’s nice because it makes a lot for leftovers as well.  Stats are approximate. With 6 servings, it comes to 386 calories, 32 grams of carbs, 20 fat grams, 20 grams of protein and 4 grams of fiber.  It is higher calorie, so I do like to eat it on long bike ride days, but it sure feels good to have during the winter, too!

    Ha! We just had our first rainy day in forever, and I was driving my neighbor around, and I said, it seems like a good day for chili. But that takes a really long time to cook, and I already have leftovers from last night’s dinner. Easy trumps comforting. I can’t really imagine how cold it is there.

    Oh, my! I can’t imagine being in -15 weather. My husband and I went out for a walk and I wore layered clothes and a hooded jacket because it was 43 and I thought I was so brave to go outside in that weather! Can you tell I live where it rarely goes below freezing?

    We are so over this cold weather, and the worst that I’ve been out in has been the low 20s. I cannot fathom -15, much less venturing out in it! This winter needs to go away!

    Well, I like country music but I think we can still be friends – I don’t listen to it all the time – I like all types!!
    That mac and cheese looks good – I’ve never mastered a homemade mac and cheese – my sauce always is a little weird!!!

    We’ve had wind chills of -30 to -40 lately. Overnight lows have been -15 to -20. Schools have been closed or delayed 2 hrs. One day of balmy weather today. High of 30 but 3-6 inches of snow is headed our way towards morning, then more cold temps. -12 tomorrow night. We don’t get a break from the cold temps until mid Feb. they say. Coldest winter in about 10-15 years. Love to cook using the oven lately – mmm-warmth.

    I can’t even imagine how your temperature feels, never experienced it. It was cold here yesterday (well for our standards 🙂 ) but that was mostly caused by the cold Eastern wind, that’s always brutal.

    I love mac and cheese but I always add ham to the dish.

    There are kinds of music that I despise more than country: heavy metal, techno, house. Anything that’s just making a lot of noise and played very hard and have stupid lyrics. Although I have to admit that though I don’t like Armin van Buuren, Avici and so on, I do like Wake me up by Avici 🙂

    I need to try this Mac and Cheese because you’re right, sometimes oven baking it takes a while. I don’t think the stats are awful – I guess I just expect them to be a bit higher for mac and cheese.

    We’re having negative wind chills but so far we’ve stayed above zero. This is the coldest winter I can remember in a while. Coupled with these once a week nuisance snow storms we keep having (yep they’re already predicting a mess for next Tuesday night/Wednesday), I am more than DONE with winter.

    Um, of course it’s better with hot sauce! A woman I worked with made the best mac n cheese I’ve ever had in my life – no wonder – it had 12 eggs in it!! It was almost like a custard – so cheesy good though. 😀

    The mac & cheese recipe looks like something I can fix for Bill. Soft and bland, but high protein & high calorie. Looks delicious. Hope I can stay out of it. LOL!

    BBBRRR so cold and I too am getting restless. I HATE the treadmill and have to force myself to atleast get on 4 days a week. The other evening we drove up to Agway to see if they had some clampy thingy’s for the bathroom pipes (maybe they are called crimpers) I don’t know. Anyhow the car temperature reading was in the teens and we passed two men jogging down the road. Whew I dpn’t think I could eve rhate the treadmill enough to go outside below 40* ever again.

    Been asking David each night if he wants mac n cheese for dinner…he keeps saying , no that is alright. Well it must be my craving because after seeing your plate, I know I am going to make it this weekend. Yummy!

    It finally warmed up here…I was getting fed up with the -35 C wind chills. So happy the Boss was able to drive me around…I would have frozen on the bus.

    Today I ventured out in Crocs and a hoodie!

    Tomorrow we may have another storm. I am ready for winter to be over! 🙂
