Staple eats

No soup for me today (said in Seinfeld way).  I froze the rest and had my staple rut meals as of late. 

For some reason, I have been eating a lot of Greek yogurt this winter. Usually I stop eating yogurt until it gets warmer, but I have been craving it.  I have this meal 3 times a week for lunch.

The apple topping (or bottom in this picture) is actually warm, so this meal isn’t all that cold. If I was really smart, I would make several batches of the topping and keep it in the fridge, but I make it each time.

 

Even though I have been super busy, I have squeezed in exercise.  Monday I didn’t, though, because of being busy and 2 hours of tutoring on top of that, I was too exhausted to do anything other than go to bed 😀  I did get functional exercise by walking packages to the post office the last couple days. The weather was in the low 40s and I just had to take advantage of that and get outside, even though it was raining yesterday.  The thing that I don’t do much of when I am busy is the internets. I have been trying to get caught up on blogs. I am reading, but not commenting as much.

Dinner was another usual for me. Baked potato with laughing cow and barbeque chicken.  I never get tired of this meal.

I wonder if I didn’t work from home if I would be swinging by for takeout at times like this.  We used to eat out a lot more years ago. Of course, if I really wanted to get something quick, there is a Subway, McDonalds, Pizza Hut and a Chinese place half a mile from my house – and a Dunkin Donuts. That’s the only place I actually get anything, though.

John’s flight was delayed, so I will be picking him up late tonight. We will get home well after midnight. Yuck. Guess I will get caught up on social media while staying awake!

    Good eats! I love being able to get outside and walk this time of year. This morning I had to really bundle up for my walk but it was so refreshing!

    Be safe driving to and from the airport! I hate those late night pick ups!

    Twins again! I am into the greek yogurt this winter too! I can’t resist the big tub of it at Costco–such a buy.

    I cooked up a bunch of chicken legs today. Good idea to have them on top of a baked potato w/some BBQ sauce.

    Staple rut meals? I have so many of them. Cottage cheese and fruit has to be one. And right now that kale super foods salad (from Costco) and the Afghan bread. None of those are meals, but I do manage to fit them in quite frequently!

    I sometimes miss the convenience of swinging by a fast food place, but it’s something I just don’t do anymore, so that’s when I end up having a “rut” meal (LOL – I prefer “go to” but same difference)…and for me, most of the time it’s Greek yogurt/fresh fruit or craisins/homemade granola. It works for any meal! 🙂

    I don’t have a real rut meal. I usually know when I’m going to be busy and adjust my meal planning to that buy planning something that’s ready fast. I have to admit I have been eating fast food for months now every Friday and I’m done with it. I’ve stocked up some meals in the fridge for Friday’s when I usually don’t feel like cooking after a work week.

    My rut meals tend to be breakfast and lunch. I don’t do much variation there. But I guess my biggest rut meal of all time is also a stereotype: The Big Salad. (Remember that Seinfeld episode?)

    I don’t know if I have a staple rut meal. I cook dinner most nights and then have left-overs for lunch and if there aren’t left-overs (joys of teen age boys!), I have a salad.
    Bummer that the flight was delayed – hopefully you were able to sleep in just a little!

    When I’m in a hurry and have nothing in mind I’ll make some tunafish with reduced fat olive oil mayo and some sugar free relish. I’ll put a hardboiled egg in if I’m not lazy. Another one is to make salmon cakes with wild salmon in a pouch, a little reduced fat olive oil mayo, breadcrumbs made up of chopped oatmeal, and then some chopped red bell pepper and green onion. I’ll freeze a few of these after I cook them and then have them later. My other thing is to just make a salad from whatever I have in the refrigerator.

    When you get a chance can you tell me what kind of laughing cow cheese you use and also is that plain Greek yogurt? Both of those meals look very tasty 🙂

      It’s the swiss flavor. The one with the green label. Yes – it’s plain Greek. I either get 0% or 2%. This bowl has the 0% Fage. It’s a 6 ounce container.

    I love seeing your hand in the first photo of the yogurt, it give some scale to the picture. I have to admit that I never can tell how big your servings are and I often wonder if they are sparrow sized servings but this looks substantial and makes me feel better, LOL cause I can’t do sparrow sized.

      I don’t do sparrow very well either. I use a 6 ounce container of plain yogurt on top. The apple topping has about 160 calories in it with 1 apples, 1 teaspoon of butter, 10 grams of cranberries and 1 tsp brown sugar. Calories on that vary depending on the size of the apple, but it’s close enough.

    Err, one of my staple rut meals is lentil pastina soup I found on a blog long time ago. It’s tasty and cheap. I also really like the cheesy crockpot chicken recipe you shared some time ago, I have it quite often.

    I’ve been thinking about raising my cooking skills to the next level. I should probably ask Biz for advice on how to become a semi-foodie…. 🙂

    I finally started my workouts on Wednesday and am super happy about that. And the weather finally turned – it’s now freezing cold and we have some snow. And the sun is shining!!!

      If you care about food, you are a foodie 😀 Just start experimenting and you can raise your cooking skills. Even a good book like the Joy of Cooking will help a lot.

    I used to cook and bake more years ago. Since I’m diabetic now I don’t try to cook new things. Probably should. Your food looks great. I read on Ali’s blog you are going to New Orleans in 3 wks. Why is New Orleans your favorite place? Have never been there. Give me a reason why I should visit there. Thanks and have a great weekend!

      Hmmm… why is New Orleans my favorite place? I can give you several reasons to visit. The food, the music, the architecture, the history. It’s an amazing city.

    My staple snack is ff plain creek yogurt with a piece of fruit or ff string cheese & my go to supper is baked chicken breast & cabbage I’ve cooked at the beginning of the week to last all week my rut breakfast is a bocca burger coupled with an egg white omelet
