I finally caved and bought a donut pan. I don’t really like unitasker kitchen stuff, but I have been wanting to bake donuts for a while without doing a yeasted cutout kind for time’s sake. The time to bake was Saturday morning.
Anhoo, here is the recipe I based mine off of from Your Cup of Cake. I made a few changes.
Donut batter:
- 1 cup + 1 tbsp of unbleached AP flour
- 1/3 cup of sugar
- 1 teaspoon of baking powder
- 1 teaspoon cinnamon
- fresh grated nutmeg
- 1/4 teaspoon of salt
- 2 tablespoons of cold butter
- 1/2 cup of 1% milk, heated
- 1 tablespoon of yogurt
- 1 beaten egg
- 1 teaspoon of vanilla
- 1 medium apple, peeled and diced fine (the smaller pieces the better).
Preheat oven to 350 degrees F. Spray a donut pan with cooking spray. I have a 6 cavity medium donut size. Not the large and not the mini, so your baking time will vary depending on your pan.
In a medium bowl, combine the flour, sugar, baking powder, cinnamon and salt.
Then cut in the butter. I use my fingers to do this because I think it does a better job. In another bowl, microwave the milk for 45 seconds to 1 minute. You want it pretty warm, but not boiling. Stir in the the yogurt, whisk in the beaten egg and vanilla. Add to the dry ingredients.
Mix just until almost incorporated, but you still see some flour. Then fold in the apples.
Distribute the batter evenly in the pan. You actually want them about 3/4 full and not all the way full as mine are here.
That way you will have a hole all the way through. Mine baked up a little high. Anyway, bake for 12-15 minutes until a toothpick comes out clean or the top springs back when set.

While the donuts are cooling, make the glaze:
- 1/3 cup powdered sugar, sifted
- 1/2 tablespoon of maple syrup
- 1 tablespoon of milk
- a few drops of maple flavoring (optional)
Mix this all really well. When the donuts are mostly cool, dip the tops into the glaze. I actually ran out of glaze for the 9th donut, so I suppose you could make a little more or thin out the glaze a bit. Then eat!
For 9 donuts, each one with glaze is approximately 150 calories, 26 grams of carbs, 3 grams of fat, 3 grams of protein, 1 gram of fiber. These are moist and cake like. John was a happy camper with these.
I think you could do them in a mini muffin pan as well. It just won’t be as fun
Man, that Broncos game was tiring and waaaay too long. I was exhausted after that game and there were a lot of F-bombs flying around the house (all by me, too). I am disappointed the the Broncos didn’t win on Saturday, but it was a good run. Now to retire my jersey until the fall. Not sure who to root for now. I don’t like either the Ravens or the Patriots (even though I did pick the Ravens to be in the superbowl back in the fall). Maybe the 49ers?
Today I had to say goodbye to Billy. He went to his forever home.
He is so, so sweet and loving. Who knew that a scaredy cat that hated people would end up such a lover! I will miss him. I sniffled all the way home after giving him to the adoption coordinator. I know he will be so happy having a home. Please no more stray kitties for a while. It’s hard on the pocketbook and the heart. I’ll have to post all the ones we have rehomed since moving here 😀

These look delicious! Do you think they’d work well with shredded apples? I’m not such a good tiny dicer. 🙂 (Ooh, now I have Elton John in my head, singing “Hold me closer, Tiny Dicer.” I need help.)
The recipe actually called for grated apples, but I diced because I don’t have a grater and my food processor broke.
Those donuts look great! My husband came in the room just as I was reading your post and was immediately drawn to the donut pictures:) Sorry about your Broncos…my Packers are done too. 🙁 My second team was going to be the Seahawks(Russell Wilson is awesome all around!), but now they’re out too:( I don’t really care about the 4 remaining, but I can only hope SFO goes all the way, and that’s why we couldn’t beat them!
Wonder how a gluten free or whole wheat flour would do??? How did you keep from eating all of them – or did you?? LOL!
I have a friend at home who rescued a cat about the same time you found Billy. Their cat is sick and the vet can’t determine what is wrong with it. Between the two of you, you’re making me very sad! And the Broncos losing didn’t help on bit!
I ate 3 out of the batch and that was it. John is more than happy to eat the others! I think if you used WW pastry flour they would be good. The GF flours just tend to be heavier, so I don’t know about that.
Missed the Bronco game darn it! But caught the Houston and New England game ….I’m hoping for Patriots and the 49ers in the SuperBowl…what do you think?Hugs! deb
I’m rooting for the Ravens just because they have 3 former Mizzou players. Those donuts look great and 150 calories is pretty good. So glad you found a forever home for Billy, but I will miss seeing pics of him.
You had Billy for a long time – and he sure did come around to being a real sweetheart…amazing what some love and caring can do for a cat. I know it’s hard to see him go, even though it’s a good thing.

I’m so happy that Billy found a loving home, he deserves that. He was so lucky to end up in your garden because lots of people would not have cared what happened to him but you did and that shows even more how big your heart is.
You’ve asked about the Hollandaise sauce. I didn’t make it myself, I only needed a little bit and mixed a tablespoon from a sauce package with some milk.

There used to be a coffee shop around here called Bess ‘Eaton and they made the BEST blueberry cake donut. I’m not even a big donut fan but that donut used to get me every time. Seeing yours makes me want to buy the pan and try to recreate that donut.
You were a good foster mom to Billy, doing just what a mom should do: prepare him to go out to the real world! I know you’ll miss him but very happy to know he’s got a permanent home.

Hope Billy is super happy in his new home. The stats on the donuts are awesome. I bought one of those pans about a year ago and have yet to use it!
