Gluten-free Monday

Hope you all had a very good weekend.  Mine was quite nice.  It all goes too fast, though.  I won the football picks for the week – so all is supreme in the land of Lori!  I did fix John breakfast this morning because I felt bad about gloating, which is quite unusual (the cooking breakfast part, not the gloating).  I made pumpkin custard oats for both of us!

Mine was topped with some of that lovely maple cream.  My goal was to eat gluten free today.

John got some molasses cooked in with his and pecans on top with maple cream.  Libby’s better get on the ball.  I have 1 hoarded can of pumpkin left.

Did you know that almond milk can go bad?  I did not.  I opened up an almond milk that we bought yesterday a month before its expiration date.  This is what it looks like.  This was supposed to go in my coffee.

Curds and whey anyone? :barf: It didn’t smell, thank goodness, but I did have to go to the store today to exchange it.

I was really productive today.  Much, much better than on Friday.  Must be because I won the football picks.   You know when things go well, they just keep going well, right?

Lunch time!

I really mean it now.  No more tuna for a looooong time.  This was so dry, even though I mixed it with light mayo.  The last of the hurricane Irene stash.  Even if we get some other weather prediction like another hurricane or blizzard or whatever, I am not buying more tuna.

I did, however, enjoy my afternoon latte!

This is topped with a drizzle of honey and some cinnamon.  A miel, in other words.  I don’t sweeten my lattes, but I do like a little drizzle of something on the foam.

Before getting dinner ready, I decided to make some gluten-free banana bread.  I am using Bob’s Red Mill gluten free flour mixture.  My first foray into the multiple non-gluten flour blends.  While that was in the oven, I heated up dinner.

Chicken thigh, mango and sauteed brussel sprouts.  This was good!  The mango was just perfectly ripe.  I really should eat mango more often – it is such a tasty fruit.

After dinner I took a walk.  Come with me…

Someone has a tasty dinner planned  😯

Fall decorations abound now:

When you are 5 feet 2 inches tall, seeing your legs this long is really exciting!

My Broncos are on TV tonight for Monday Night Football.  However, it is the 2nd game which starts at 10:15 p.m.!  I will be asleep by the end of the first quarter, I think.

So how did that gluten-free banana bread come out?

Triple dipple thumbs up!  Gosh this was good.  You would never even guess it was gluten free, either.  I will post the recipe tomorrow.

Go Broncos!!

Your gluten free day looks amazing! I just bought some of Bob’s Red Mill Gluten Free flour. I have a friend who is on a gluten, egg, dairy, soy free diet! I am trying to figure out some “treats” to make for her. I can’t wait to see your bread recipe!

Are you able to get gluten free oats there? The Boss loves his oats and he was able to find some in the packets…unflavoured as he doesn’t want extra sugar…we can also get the bags of longer cooking oats in GF too.

The banana bread looks so good!!! I am thinking of making GF zucchini bread one day, but I am game to try banana first. Can’t wait for the recipe.

Congratulations on winning! Go Broncos! I picked them and New England tonight…hopefully I can raise my dismal week to six.

GF oats are in regular grocery stores around here. The old fashioned kind. I only buy old fashioned slow cooking oats or steel cut.

I had a dessert “pie crust” made with that Bob’s gluten free flour mix, and everybody agreed that it was better than the “regular” crust. It was NOT fat free, however! I might have to pick up some of that stuff, to get better with my “minimal wheat” policy.

I don’t care so much about the fat free 😀

I was surprised at how good this bread is. Even John loved it. I would like to make my own baking flour mix, but it was just easier to try it out with a premixed type than buying each of the individual GF flours.

Your lattes always look so yummy 🙂 Yea, I’m out of pumpkin, I’m cheap though and don’t want to pay online prices. Need to look at more stores around town see if I can find a few cans 🙂 Glad your banana bread turned out 🙂

    That banana bread looks delicious!

Congrats on winning the football picks. I’m not sure if John still likes me after my comments on Facebook 🙂 but hey: I’m on team Lori this season.

I want some banana bread! 🙂 Looks amazing! I love the fall decorations too. I miss that here in southern CA where people don’t do it much or at least where I am…

I hear you on that shadow! A couple more inches on us short people would help! 😉

Congrats on winning the football picks! Does that mean John has to do whatever you say??? 😉

CANNOT WAIT for the gluten-free banana bread recipe. I am drooling and clawing at the computer screen. I love bread so much but wheat just causes the scale to zooooooom up in a shockingly dismal fashion!

I still think I need some maple cream. Also need to try pumpkin oats. Just ordered a large stash of organic pumpkin which should arrive this week!

All you people who can’t find pumpkin are making me nervous! My stores seem to have plenty of it. I wonder why?

The banana bread looks fab. I’ll be looking forward to the reccipe as I have a SIL who has celiac disease so I’m always on the lookout for things I can share with her.

There is still organic pumpkin available, but I don’t want to pay almost double for it, although I will if the regular pumpkin does not get here fast. We really had a shortage a couple years ago and I think people just stocked up (like me).

I haven’t had mango in forever. Looks so good.

Love the walk. The sign cracks me up!

I want those pumpkin custard oats.

I had no idea that almond milk would do that!! Now I’m going to be extra careful.

I think I’ve finally convinced my husband to try going gluten-free for two weeks beginning after dinner out this weekend. He has a symptom that can be indicative of gluten intolerance and has never otherwise been medically diagnoses despite lots of testing. So, I’m going to be meal planning since I know he won’t do it if I don’t help:)

Your gluten free day looks great. Look forward to the recipe, and LOVE the shadow shot. Hilarious, I have a shadow shot of Dennis and I on my post today. Great minds think alike! Have a wonderful Tuesday.

I got all excited looking at your shadow pic. I am 5’2″ as well and would love to have legs that long! LOL
