All buttoned up with Chicken Corn Chili

This is one of those days when I am so, so glad to work from home.  We are lucky to be above the sleet line and have all snow up here.  Of course it is a lot of snow!

John went out twice with the snow blower to keep it under control while I worked.  He is gunning for his 15 straight win of Husband of the Year.

I made a warm and comforting breakfast to start the day.  I did cream of wheat (with egg whites whisked in) topped with the apple/cranberry topping, which I made with raisins instead.

This is in lieu of Bagel Wednesday as we just couldn’t get out.  Hopefully Thursday!

I had some munching problems early in the day.  I was very hungry for some reason.  I tried to get extra protein with lunch with a double dose of tuna:

Kiwis are back!  Yippee!  I also actually had probably another entire serving of these pretzel thins while making lunch.  Just to be honest here. 😳

Then I went out during the afternoon break in the snow to skim off the driveway and sidewalks. This is our front walk.

I look irritated, but I actually am not.  My eyes are sensitive to brightness. Even on a cloudy day, the snow is bright enough to make me squint, which produces what we have affectionately named “the divot” between my eyebrows that is permanent.

I was ready for this when I came in!

Weather like this calls for some warm and tummy filling chili.  In my effort to do more recipe cooking this month, I decided to make the Chili with Corn, chicken, and chipoltes from Sunday Soupby Betsy Rosbottom.  I made some modifications to this,including using already cooked chicken, not adding beans, and reducing the recipe size.  Changes I made are marked with an asterisk.

  • 1-1/2 tbsp of oil (I used coconut) *
  • 1/2 cup of chopped onions (which I pureed) *
  • 1/8 cup of flour
  • 1 tbsp chili powder
  • 2 tsp ground cumin
  • 1/2 tsp salt
  • 3 cups of vegetable broth *
  • One 15 oz can of chopped tomatoes, drained
  • 2 chipotles in adobo sauce, chopped (I divided a can of these up and froze portions for convenience).
  • 2 cups of frozen corn kernels
  • 6 oz of cooked chicken breast, chopped *

Heat the oil in a soup pot and saute the onions until lightly browned (several minutes).  In a small bowl, mix the flour and spices together and sprinkle over top the onions.  Stir and cook for 1 to 2 minutes.  Then add the broth slowly, whisking to make sure you don’t get clumps. Then add tomatoes and chipotles.  Bring to a simmer,cover, and cook until the mixture has thickened –  about 15 minutes.  Then add the corn and  chicken.  Cook for 10 more minutes until everything is heated through.  It helps if the corn kernels are thawed.   :mrgreen: Makes 4 servings.  Season to taste with salt and pepper if desired.  This is more like soup than chili, so if you cut down to 2 cups of broth, it would probably be thicker.  Each serving is about 2 cups!

Each serving has 216 calories, 6.5 grams of fat, 28 grams of carbs, 2 grams of fiber, 13 grams of protein.

This was really good.  It is quite spicy, so you may want to either leave out the adobo chipotles or reduce the chili powder a bit.  I like it hot.  John was getting sweaty, though! 😈

My work slowed down some as the clinic lost a lot of patients from the snow storm.  I now have time to do my 15 minutes of cleaning and some bike trainer riding.

    I like spicy, but not too spicy. Your chili looks really good.

    I can’t believe how excited you are to shovel snow. 😀

    D is so happy that we live somewhere that where he no longer has to shovel snow…it also gives us a big thrill to sit in the hot tub and watch the snow come down. Little things make us so happy!!!

    Any tricks for controlling the snack monster when you are home all day? I do fine when I’m at school, but I’m on Day 2 of snow days (and we are definitely off Thursday and probably Friday). I find myself snacking more than I need to.

      I don’t know about any tricks – that snack monster can really be a beast! I find mints do help if I am really snacky because they just make other foods not taste so good.

    I think snow days lead to snacking. At least that’s what I’m telling myself down here as I move into Day Three of Stuck-At-Home. I like spicy but not too hot, if that makes any sense.

    I like it nice and hot; we call it habenero hot in our house. I generally pick a 9/10 or 10/10 chilli sauce.

    I just made some Black Bean Chili with chipotle peppers with adobe and it was delish! My first bowl I ate alone (with know carbs to absorb the heat). The next day I ate a bowl with brown rice and lots of guacamole! Just right. I’m into spice though. To the point of noise running. 😉

    This recipe looks so good! I have been cooking with coconut oil myself alot lately.
    I agree~ I am so happy I am home on days like these! SO cold out there!
    I also have been wanting to eat allllll day. I have been trying to reach for healthy things . But I did have a cookie. And, it wasn’t even good. So , that makes it worse! ( :

    From what I hear you will need spicy hot tomorrow! Stay warm up there. It’s going to be frigid. Pixie will be so glad to have her cozy home to snuggle in, I’m sure. I like spicy food, but my tummy does not, more’s the pity. You are lucky not to have that problem. Thanks for the chili recipe.

    Mmm, I love spicy! Those chipotle chilis can really grab you by the booboo if you’re not careful, though! (I do like their smoky flavor – found some chipotle chili powder that works pretty well.)

    That recipe looks absolutely delicious. I might just try it tomorrow. Although I will definitely modify it–I like some spiciness, but not too hot, like Roxie. I made myself a fake latte today–most excellent!

    That snow is out of control!!

    And as you know, I have a lot more trouble with the snacking at work than I do at home.

      I don’t like beans – so I leave them out. And true chili actually doesn’t have beans, even though most include them 😀

    I’m really sensitive to brightness too! Sometimes I wear my sunglasses when I’m driving on a sunless day. Spice level… moderate. My husband and teen love spicy!

    OMG on the snow! Brings back some memories of my younger years when I grew up back east! Don’t miss the cold but I do miss the “less craziness”!

    I am like you – my eyes are sensitive to light as well & I got that crease thing going on as well along with major forehead wrinkles.. people always say relax to me but I am & they think I am not due to all that “creasing” ! 🙂

    I’ve got the divet too! As a child I received an unwelcome chicken pox scar that makes the divet even more pronounced! I always look like I’m mean and scowling! Looks like our eyes are pretty similar in color. Mine are a super light grey/blue and light KILLS them.

    My spice limit is looooooowwwww. I think everything is too spicy! I’m trying to retrain my taste buds.

    I don’t like super spicy food. I thought hubby was the only one who started sweating when he eats hot food! I’ve never had that happen to me before- but it’s common for him.

    My eyes are really sensitive to light, too. I wear sunglasses when it’s cloudy outside. Otherwise I’m squinting and end up with a headache!
