The colors of food

Finished up my work week! Yes!  Now it’s relaxing time.  Sort of.  Lots to do this weekend.  Don’t forget to enter the book giveaway if you haven’t!

Started off the morning with a good run.  While I truly miss my biking since it is winter, I am actually enjoying just concentrating on running.  Over the summer and fall I was doing NROLW, and training for a triathlon and duathlon, so I couldn’t focus on just one thing.  So this has been fun.  I did my speedwork yesterday, so today I put on something from jogtunes and went to town (or rather went on the hamster wheel…).  I varied the speed a little according to the music, but pretty much averaged 5.5 to 5.7 mph.  I did 6 miles today.  It really felt good.  I’m not sure if the runner’s high is real or not, maybe it is just feeling good running that far LOL!  Put me in a really good mood all day long.

Came home and had some steel cut oats cooked with a nana, and topped with those itty bitty mini chips.  I love how 1 serving looks like a billion chips (hello bulk eater).

Everything was so hot.  I was practically dancing around waiting for it to be cool enough to eat or drink 😯

One of the reasons I love  working from home is because I get to work like this:

Lunch was a hughjass salad with bbq chicken and feta cheese.  I am addicted to this mixture.  This picture doesn’t even show how big the bowl of salad mix was.  Probably 3 cups or more.

This is such a pretty and colorful lunch.  I used the 50/50 spring salad mix from Salad Express.  Gotta love salad in a bag!

Had an interesting phone conference today.  It involves the blog, so I hope some good things come out of it.   Only time will tell.

Afternoon caffeinated necessity:

Breezed through the afternoon of work.  I won the football picks this week, and almost thought about dinner out tonight, but I am leaning more towards breakfast or possibly lunch!  Go me!  😀  So instead, I kind of wanted some extra carbs (6 mile run will do that, I guess…).  I wanted a sweet potato, laughing cow,and some brussel sprouts, but also needed protein.  I decided on some lentils.  The idea was to put everything on the potato, but it was too small to hold the sprouts.  Ooops!

The lighting isn’t great, but the plate was very colorful while I was eating it 😀  I love laughing cow on a sweet potato!  Who knew.  Funny thing during dinner.  John was kind of looking at my plate a little funny.  He then said that this plate was representative of how much I have changed.  Almost like we were in an alternate reality LOL!  Tastes really can change.

Think I might go out and buy some new walking shoes with a gift certificate I got from work (Christmas bonus).  Mine are pretty  much the worse for wear and I need something to walk around N’awlins and during the cruise!

    I love avocados. I don’t think I ate one until I was an adult. I had one today with my lunch, just scooped it out, added some salt and lime and it was delicious!

    Great question! For me, the answer is as simple as vegetables. Before this journey, if it was green, it better, by god, have a cheese sauce on it. I’ve now grown to love, adore and CRAVE vegetables. Greens most especially. Who knew they were so stinking good!

    Question for you: Where are steel cut oats located in the grocery store? All I can find is the Quaker stuff…

      I need to try leeks! Steel cut oats are usually in the either health section or natural foods section. Ask if your grocery carries Bob’s Red Mill products, because that it where you’ll probably find it.

    Any green veggies? Lol.. I guess it would be asparagus! I love asparagus… could eat it every day! I just pop it in the oven and drizzle a little evoo. So YUMMY!

    I guess I’d have to say those little seaweed snacks that you gave the stinkeye to LOL! That comment cracked me up! There are a lot of things and combinations of foods that I eat now that I would not have considered ‘worthy’ in my former life.

    I had a sweet potato with the leftover veggie stir fry from yesterday on top of it. Laughing cow would have been a nice addition!

    I meant to ask–as much as you love your bike, I don’t hear you mention using a stationary bike at the gym. Do you not like them or what? I just started using one a little bit because they put it upstairs in the weight room.

      Funny you should ask about the bike. I used one today. I don’t like the stationary bikes at my gym. The seat is very uncomfortable for me, and I can’t seem to find a way to be able to ride it for very long.

      I have never eaten sardines – and I just can’t get past the ick factor to try them? I hear people rave, but I just can’t cross over LOL!

    My husband works from home as well – you guys are lucky, especially when the weather is so challenging this time of year. I don’t mind walking and running in it, but driving? That’s another story.

    As for what I eat now that I’d never thought I would – TOFU!

    The food always looks so yummy! Let’s see… the one food I eat now that I wouldn’t have eaten before would have to be ground turkey. I love ground beef, well, beef anything. Now I use a lot of ground turkey breast.

    Ahh I love all those mini choc chips in your oats! I am such a bulk eater, too. Your kitty mug is also adorable!

    Ohh, there are so many things I eat now that I’d never imagined I’d eat. Like brussels sprouts, pumpkin, eggplant, asparagus… I used to hate greek yogurt, but now I love it!

    I tried tilapia and loved it! I want to try salmon, but haven’t yet. Actually, there are a lot of foods I’d like to try that I never have before.

    I also had a turkey burger recently and LOVED it. Never, ever in a million years would I have thought *I* would be eating turkey burgers!

    It’s interesting what you said about working from home. I actually have to shower and get ready (not business attire, but normal clothes) for me to actually get work done at home. I wonder about what other people do?… Interesting…

    Hmmmm…I don’t have a lot of foods I don’t like. I don’t care for most squash or sweet potatoes, but otherwise, I’d be hard-pressed to think of a veggie I don’t love and haven’t loved for a long time.

    Girl…your running is so impressive!!!

    Everything looks delish…especially that salad!

    I eat so many things now that I never thought I would…broccoli, cauliflower, asparagus, egg whites, spinach, brussel sprouts and on and on. I still won’t touch fish, mushrooms or raw tomatoes. I don’t see that ever changing.
